Biscoff Cheesecake protein bars

Prep time: 15 minutes

Freeze 8+ hours

  • 400g (~2 cups) Cocowhip

  • 60g Vanilla Protein Powder

  • 12g Monk Fruit Sweetener

  • 21g SF Jell-O Cheesecake mix

  • 1 tsp Vanilla extract

  • 454g (1 container) Dairy-Free Kite Hill Greek Style Yogurt

  • 20 XL (Air plane) Biscoff Cookies. 18 for the sandwiches and 2 to mix in

Ingredients:

Directions:

  1. Mix all dry ingredients in a large mixing bowl

  2. Mix in wet ingredient thoroughly to remove any clumps.

  3. Crumble two cookies and fold in.

  4. Line a baking dish with parchment paper that runs up all sides. Using clips to hold these in place is a great move!

  5. Layer 9 Biscoff cookies along the bottom, with the text side facing down

  6. Fold in the filling mixture and spread it across evenly.

  7. Place another layer of Biscoff cookies across, this time with the text side up

  8. Freeze overnight in the baking dish and enjoy
